Low-Carb General Tso’s Chicken Recipe
For the chicken
1 bag of pork rinds, crushed
1 eggs, beaten
3-4 boneless skinless, chicken thighs or breasts
3/4 cup, almond flour

For the sauce
2 tablespoons stevia
2 tablespoons sugar free ketchup
2 tablespoons rice vinegar
We recommend Marukan Genuine Brewed Rice Vinegar
1 tablespoon low sodium soy sauce
We recommend Premium Lite Soy Sauce Low Sodium
1 teaspoon garlic powder
We recommend McCormick Classic Garlic Powder
1 teaspoon chili powder
We recommend McCormick Chili Powder
¼ teaspoon cayenne pepper
We recommend McCormick Ground Cayenne Red Pepper
1/8 teaspoon xanthan gum
We recommend It’s Just – Xanthan Gum, Keto Baking, Non-GMO
Prepare and enjoy this guilt free chicken meal!
Grind pork rinds and put in a bowl. In a second bowl, beat 2 eggs. Cut up boneless chicken thighs into cubes. Dip in egg wash and then the pork rinds. Place on cookie sheet and cook at 400 degrees for 10 minutes on each side or until fully cooked. Cook the sauce ingredients in small saucepan and stir frequently. When your chicken is done, put in an enclosed container, pour your sauce on it and shake.
