I had a brainstorm one day and basically used my pizza dough recipe to make a low carb version of a Hot Pocket.

Keto Hot Pockets Recipe
For the pizza dough
10 oz shredded mozzarella cheese
1 egg
5 oz almond flour
1 teaspoon baking powder
1 tablespoon garlic powder
1 tablespoon onion powder
Mix the ingredients!
Melt shredded mozzarella in microwave. Add one egg and blend / mix together
In a separate bowl, mix almond flour with baking powder, garlic powder and onion powder.
Time for some kneading!
Slowly mix flour mix into egg mixture and knead into a ball. Place between 2 pieces of parchment paper and flatten with a rolling pin.
Bake it till you make it!
Cook on parchment paper on baking sheet at 400 degrees for 10 minutes or until brown.
For the fillings
salami
cooked sausage
pepperoni
marinara
Bake and enjoy your perfectly crispy hot pockets!
Use pizza dough recipe from above. Use rolling pin to flatten, then cut into 2 rectangles. On first rectangle, add your ingredients. I used salami, cooked sausage, pepperoni, and marinara. Take the second rectangle and place on top. Crimp the edges with a fork. Cook in the oven at 400 degrees for 10-15 minutes, until crust is golden brown.
