Cauliflower Mashed Potatoes Recipe

Cauliflower Mashed Potatoes Recipe

24 oz frozen cauliflower

2 oz cream cheese

2 oz KerryGold salted butter

garlic powder to taste

salt

Boil it to softness!

Boil 24 oz of frozen cauliflower for 15 minutes (if you can buy these in the steamable bags, this is even easier).

The secret is out! Drain till you drop!

The secret to making these come out great is to remove as much of the excess water / moisture so they’re not runny. Here’s a trick I use that works best: Place the cooked cauliflower in a wire / mesh strainer. Use a bowl that’s slightly smaller / roughly the same size to press down on the cauliflower and push all the moisture out. The more water you can remove, the better this will be.

Blend and adjust according to taste!

Place the cauliflower into a food processor / large blender and add 2 oz cream cheese and 2 oz KerryGold salted butter. Once all blended, add salt and a bit of garlic powder to taste.
