Cauliflower Fried Rice Recipe

Cauliflower Fried Rice Recipe

2 tablespoons sesame oil

1 onion, chopped

1-2 tablespoons minced garlic

4 large eggs

1 small bag of frozen peas and carrots

2 small bags of cauliflower rice

Chop, saute and steam!

Chop an onion and saute it with minced garlic in 2-3 tablespoons of sesame oil in a large pan. Steam 2 bags of cauliflower rice in the microwave.

Drain and remove that excess water!

Use a bowl and a mesh strainer to remove as much water from the steamed cauliflower rice as possible.

Recreate your favorite fried rice the cauliflower way!!

Now add cauliflower to the pan and mix everything together. Push all of this to the sides, leaving a hole in the middle of the pan.  Scramble 4 eggs in a bowl, and pour into the middle of the pan. Once eggs are cooked, start pulling rice in and mix everything together. Add your desired amount of frozen peas and carrots (technically these aren’t Keto, but a small amount isn’t going to hurt) and continue mixing everything in the pan.  Now add low sodium soy sauce – be careful with this because a little bit goes a long way.  I’m not sure exactly how much I add – I do 1 tablespoons at a time and keep stirring / and taste-test it until it’s just right.
